Summer Vegetable Salad with Grilled Steak
What about some Grilled Steak on a backyard party on this summer? It goes simply awesome for me. It will be more amazing if served with some nice summer vegetable salad.
Summer Vegetable Salad with Grilled Steak, Ingredient you’ll need:
- 1/3 cup extra-virgin olive oil, plus more for grill
- 2 sprigs rosemary
- 5 garlic cloves, thinly sliced
- 1 1/4 pounds hanger steak
- Coarse salt and ground pepper
- 1 medium eggplant, cut into 1/4-inch-thick slices
- 1 zucchini, cut into 1/4-inch-thick slices
- 1 yellow squash, cut into 1/4-inch-thick slices
- 1/2 pound cherry tomatoes on the vine, or plum tomatoes, halved
- 1 bunch scallions
- 1 sweet bell pepper (any color), cut into sixths, seeds and stem removed
- 2 tablespoons balsamic vinegar
- 1 1/2 teaspoons honey
How can you make your first Summer Vegetable Salad with Grilled Steak?
You can use any grill like electric grill, gas grill or charcoal grill for making your first Summer Vegetable Salad with Grilled Steak. But I prefer electric grill. Heat your electric grill to medium-high. In a little ovenproof pan, mix oil, rosemary, and garlic. Place the pan on your grill. Cook until oil begins to gurgle for at least 2 minutes. Remove herb oil from the heat and set to the side not more than three tablespoons in a small bowl.
Brush steak with herb oil. Season it with salt and pepper, and grill. Turn your steak occasionally for about 10 minutes per side. Don’t make it over brown. Transfer steaks to a cutting board and tent them with foil. Let’s have a rest for 10 minutes before you slice your grilled steak to thin pieces against the grain.
In batches, brush all vegetables through vegetable oil, season them with salt and pepper, and grill for your Summer Vegetable Salad with Grilled Steak. Apply same process like steak. Turn vegetables occasionally until tomato skins are split and vegetables are tender. It will take between 3 to 5 minutes only. Shift the dish to a serving plate, along with sliced steak. Add some vinegar and honey to reserved oil and whisk together. Add some salt and pepper for a spicy taste.
